Hello beautiful people and welcome to my blog. Hope everyone is doing well and making the most out of the last couple of days before the year ends.
So today I will be sharing a very easy recipe that most of us can make but with a twist. The recipe I am sharing today is Pineapple&Mango Shrimp Fried Rice, a regular fried rice with a twist of sweetness and a little spice. I also have a video showing me making it in case you want a visual version. I will link it below.
As I mentioned before, this is a super easy recipe. I absolutely love the blend of flavour and I hope you will too, so let’s get into it..
*Ingredients: Mangoes | Pineapples |Shrimps |Rice | Mixed Vegetables | Eggs *Seasonings: Korean bbq chilli seasoning | Garlic | Mixed herbs |All-purpose seasoning |Salt & Pepper | Chilli flakes | Parsley | Butter
Instruction: So I started off by prepping the fruits, cutting them up in little cubes. I cut the pineapple in halves, as I was planning to use to pineapple as a bowl to serve. First step is cooking the fruits on medium heat and for a couple of minutes, seasoning them with some mixed herbs, Korean seasoning, salt and pepper. Once that’s ready, I then cooked the shrimp using butter, salt and pepper, Korean seasoning.
As you are cooking the fruits and shrimps, I had the rice cooking. Once everything was ready, I mixed it all together, beginning by combining the rice, mixed vegetables and eggs for the regular fried rice. Once that’s cooked properly, I added the cooked fruits and shrimps, add in the soy sauce and let it cook together for a couple of minutes and voila it’s ready to serve.
This is such a quick and easy recipe, filled with so many flavours. The sweetness from the fruits and the spiciness of the chilly combined together is so tasty! Served it in a pineapple bowl and VOILA! Dinner is served.
