Hello beautiful and welcome back to Mimmacula’s Kitchen. Although I love cooking and experimenting, sometimes I prefer to cook something that wouldn’t require more than 30min in the kitchen. I made this quick pasta recipe a couple of days ago, the recipe had three main ingredients: Pasta, zucchini and cherry tomatoes and a few spices. Such a simple vegetarian dish but you could add meat or fish on the side if you want. This recipe took about 25-30min to make  and was  absolutely delicious.

Start by boiling the pasta to your liking, I prefer mine al dente (firm to bite but not too soft). As the pasta is cooking, chop the zucchinis and cherry tomatoes ready to stir fry. Once the oil is ready, add in the vegetables. Stir for about 5-6 mins then add in the mixed vegetables, OXO vegetable cube , salt and pepper, let it cook for another 5-10minutes. The pasta should be ready to add to the vegetables, mix it all together and VOILA!!
